A PLACE,
A STORY

The Distillerie de l'Arbre Sec opened its doors in the center of the capital, in the historic district of Louvre.Why L'Arbre Sec? Simply because we are located at 52 rue de l'Arbre sec, a Parisian street steeped in history.

Tout simplement parce que nous nous situons au 52 rue de l’arbre sec, une rue parisienne chargée d’histoire. 

This small street in the first arrondissement was once a place of torment: the dry tree was the nickname given to the gallows that were erected there for a long time. During the plague epidemic that hit Paris in the 1550s, the Rue de l'Arbre Sec was also the place where numerous bodies were stored. Despite this history full of morbidity, we chose not to ignore it.

Pendant l’épidémie de peste qui frappa Paris dans les années 1550, la rue de l’arbre sec fut également le lieu d'entreposage de nombreux cadavres. 

Malgré cette histoire empreinte de morbidité, nous avons choisi de ne pas l’ignorer pour autant.

The hangman we chose for our logo, serene and smiling, is the symbol of the desire to “turn” a negative thought into a positive momentum. Indeed, the hangman card in the Tarot of Marseille has a very optimistic meaning: it invites you to persevere, to take a step back and consider the situation from a... different angle. As entrepreneurs, this interpretation spoke to us a lot! Our place itself is also a bearer of history. Overlooking the courtyard of the former Private Mansion of the Trudon family built in 1717, this place would also have served as a school and even a chapel. More recently, this place housed one of the largest collections of antique press. This building, classified as a historic monument, now hosts a must for wine lovers: Les Caves du Louvre.

Effectivement, la carte du pendu dans le tarot de Marseille a une signification très optimiste: elle invite à persévérer, à prendre du recul et envisager la situation sous un angle… différent. 

En tant qu’entrepreneurs, cette interprétation nous a beaucoup parlé! 

Notre local en lui-même est aussi porteur d’histoire. Donnant sur la cour intérieure de l’ancien Hôtel particulier de la famille Trudon construit en 1717, ce lieu aurait également fait office d’école et même de chapelle.

Plus récemment, ce lieu abritait l’une des plus grandes collections de presse ancienne. Cet immeuble classé monument historique accueille aujourd’hui un incontournable des amateurs de vin : Les Caves du Louvre.  

Today, it is at this address that we decided to install our copper still and thus launch an authentic artisanal gin distillery, open to the public, in the heart of Paris.

OUR ALEMBIC

Who says distillery, says still. And for our still, we chose the best possible quality by sourcing from the famous German brand Holstein. Founded in 1958, in the Lake Constance region, this family business has established itself as a global reference for the manufacture of handmade stills.

We chose a hybrid still, combining a traditional pot still base with a column. This configuration gives us great flexibility in our production process, allowing us to explore numerous styles of spirits.

For more technical details, it is a copper still with a capacity of 150 liters, with electric heating in a water bath. It is equipped with a concentration column with 5 trays, as well as a deflegmator and a catalyst, a proudly patented part of the Holstein company. In other words, this installation allows us to obtain rich and complex distillates; and also a versatile use to produce a wide range of spirits.

En d’autres mots, cette installation nous permet d’obtenir des distillats riches et complexes ; et aussi une utilisation polyvalente pour produire un large panel de spiritueux. 

For the distillation of gin in particular, we also chose an herb basket in the cucurbite, as well as a “carter head” with another basket between the capital and the condenser, in order to be able to practice a more delicate distillation for flowers or plants with fresher aromas.

Nicolas PARADIS

Originally from the South of France, Nicolas is a serial entrepreneur. A graduate of Arts et Métiers and ESSEC, Nicolas cut his teeth in strategy consulting before leaving a well-planned career to develop in 2004 a small company called Ô Chateau, a pioneer of wine tourism in Paris, a pioneer of wine tourism in Paris, also a wine bar, which will become an essential reference for lovers of great wines by opening in 2011 in the center of the capital. In 2015, Nicolas opened Les Caves du Louvre, also in the first arrondissement. Other projects will emerge later, always around innovation in the world of wine and gastronomy. Always inspired by new ideas, Nicolas crosses paths with Charlottes, and their distillery project caught his attention. They then decided to join forces together to give life to the Distillerie de l'Arbre Sec.

Charlotte BARTOLI

Born in Paris, Charlotte studied in Switzerland at the Glion Hotel School. She then acquired international experience working for major hotel groups in Ireland, China and the United States. It was in San Francisco that she developed a real passion for spirits, especially gin.

She then decided to train in the art of distillation with a vintage boiler and followed the courses of the International Spirits Center in Cognac (CIDS). Her path finally led her to the Ergaster distillery, where she became a production manager for two years. Back in Paris, Charlotte then worked for La Maison du Whisky, where she was responsible, among other things, for the selection of casks for certain prestigious whiskey bottlings.

Originally from Burgundy, Charlotte grew up surrounded by vineyards and wine. After studying at the famous “Viti” in Beaune, she multiplied the positions in the world of wine: in the vineyard, in the cellar, in sommelier, in sales... But his preference will remain the art of tasting and sharing his passion.

After professional experiences in France, New Zealand and California, it was while traveling the British Isles that she fell in love with the world of spirits and cocktails, and was particularly passionate about gin. She then decided that she wanted to create her own distillery in France, and left to train in England at the Silent Pool distillery.
